Red Chile Chicken with Rice and Black Beans
Again, Pink Parsley comes through for me :) As I mentioned before, she’s been making some fabulous recipes lately, and this was another tasty one, for sure. The sous chef and I paired this one with the wonderful Mexican Corn Salad.
Sadly, my sous chef was volunteering for an opportunity at work that had him working nights, so I had to savor this by myself for the first time, and he had to partake in it alone the first time while I was at work :/ It was hard for the two of us to operate in the same house but not at the same time. However, making yummy dishes definitely made it not seem SO BAD since we weren’t resorting to eating out every meal just because we were alone.
All that to say that good, home-cooked, healthy food really can warm the soul…and doesn’t have to make you fat ;)

Ingredients
2 Tbsp. canola oil
4 boneless, skinless chicken breast halves (1.25-1.5 lbs. total)
2.5 Tbsp. ancho chili powder, divided
1 medium onion, large dice
1-2 jalapenos, diced
1 cup rice
4 cloves garlic, minced
1.5 cups chicken broth
1 (15 oz.) can black beans, drained and rinsed
1/4 cup chopped green onions, (OR 1/3 cup cilantro) OR a mixture of both (which is what I did)
1/2 to 1 cup salsa, for serving
lime wedges and sour cream, for serving (optional)
Directions
Season chicken with salt, pepper, and 1 Tablespoon of chile powder. Preheat a large skillet with oil until shimmering. Brown chicken on both sides, 2-3 minutes per side. Remove from skillet and place on a plate, leaving behind as much oil as possible. (As with other chicken recipes, Krista Kooks cooked this chicken in the crockpot with the oil, salt, pepper and chile powder.)
Sautee onion, rice, and jalapeno until the rice is toasted and is no longer translucent and turns opaque. Add the remaining chili powder, the garlic, and 1/2 teaspoon of kosher salt. Cook 1 minute, then stir in the broth. Bring to a boil, reduce heat, and cover. Simmer 10 minutes.
Meanwhile, cut the chicken into bite-sized pieces. Add the chicken and the black beans to the pot, stir, re-cover, and cook an additional 10-12 minutes.
Taste a grain of rice. If it is slightly chalky in the center, remove the pot from heat, stir in the green onion and cilantro, and let sit, covered, 5 additional minutes. If it is not cooked through, re-cover the pot, and cook an additional 5 minutes, or until done.
Fluff rice with a fork, and serve with salsa, sour cream, and lime wedges.

Chicken Picatta
I have been all about making some of Gina’s recipes lately. This entree was a staple, and I know we will continue to make this in our house. In fact, even though I rarely make a meal twice, this one has since been made a second time. We’ve had it twice in a matter of weeks! Coming from Krista Kooks, I hope you realize that means we love it!
I was not able to find seasoned whole wheat bread crumbs, so I purchased plain whole wheat and seasoned them myself with Italian Seasoning. Remember…you can make Italian seasoning yourself!
Ingredients
2 (16 oz) chicken cutlet halves, all fat trimmed
freshly ground black pepper
2 large egg whites
2/3 cup seasoned whole wheat dry bread crumbs
Olive oil spray (about 1 tbsp worth)
1 tbs light butter
juice of 1 lemon, lemon halves reserved
1/4 cup dry white wine
1/2 cup chicken broth
1 tbsp capers
Sliced lemon, for serving
Chopped fresh parsley leaves, for serving
Cut chicken into 4 cutlets, then place cutlets between 2 sheets of parchment paper or plastic wrap and pound out to 1/4-inch thick. Sprinkle both sides with salt and pepper.
In a shallow plate, beat the egg whites and 1 teaspoon of water together. Place the bread crumbs in another plate. Dip each chicken breast first in the egg, then bread crumbs.
Heat a large saute pan over medium to medium-low heat. Spray a generous amount of olive oil spray on one side of the chicken, and lay it in the pan, oil side down. Spray the top of the chicken generously to coat and cook for 2-3 minutes on each side, until cooked through. Set aside until you make the sauce.
For the sauce, clean the saute pan. Over medium heat, melt butter, add the lemon juice, wine, chicken broth and the reserved lemon halves, salt, and pepper. Boil over high heat until reduced in half, about 2 minutes. Discard the lemon halves, add the capers and serve one chicken cutlet on each plate. Spoon on the sauce and serve with a slice of lemon and a sprinkling of fresh parsley.

Paella
The sous chef and I discovered that we aren’t big fans of clams, so…we ended up removing those little guys and tossing them. Otherwise, this dish was TERRIFIC! We had plenty of leftovers and ate them all!!! The recipe I’m posting below is the halved version of the recipe as I just can’t imagine needing the full recipe that the cookbook lists. As it is, we had to use our largest tupperware dish to save the leftovers!
Paella
adapted from Fannie Farmer Cookbook
Ingredients
1/16 teaspoon of saffron
2 cups chicken broth
2-3 chicken breasts
salt
freshly ground pepper
2 Tbsp olive oil
1/2 teaspoon oregano
6 thin slices spicy Spanish sausage (Chorizo)
1 cup chopped onion
2 cloves garlic, sliced
2 Tbsp butter
1 cup short grain rice
1/2 pound shrimp, cooked, shelled, and deveined
1/2 package frozen tiny peas, or 3/4 cup fresh peas
1/4 cup chopped parsley
1/2 tsp salt
Directions
Put the Saffron to soak in 1 Tbsp of the chicken broth. Rinse the chicken, pat it dry, and sprinkle liberally with salt and pepper. Heat the olive oil in a large skillet, add the chicken and brown well on all sides. Add 2 tbsp of water and the oregano. Cover and cook over low heat for 20 minutes or until the chicken is done. Remove the chicken and set aside.
Lightly brown the sausage slices; remove and set aside. Add the onion and garlic to the pan and cook, stirring, for 5 minutes. Melt the butter in the pan and stir in the rice, saffron, and about half a teaspoon of salt, cooking for 5 minutes. Add the remaining chicken broth, bring to a boil, cover, and simmer 20 minutes.
Preheat the oven to 350 degrees F. In a shallow 4-quart casserole, arrange the rice, chicken, shrimp and sausage so that some of each shows on the top.

Chicken Noodle Soup
I took some help from Annie’s Eats recipe for Chicken Noodle Soup which she got from Cooks Illustrated. I definitely didn’t have the time on hand that day to make her recipe in full, so I did take some shortcuts. Below is the adapted form of her recipe that I made, although I know, if you have the time, making it Annie’s way will produce and healthy rich-tasting soup :)
Ingredients
1 to 1 1/2 pounds chicken breasts
1 Tbsp olive oil
5 cups chicken stock
3 tbsp. cornstarch
¼ cup cold water
1 cup thinly sliced onion
½ cup celery, cut into ½-inch pieces
1/2 cup chopped carrot
1 cup (4 oz.) egg noodles
1 tbsp. minced fresh parsley
1 tsp Cumin
Directions
Put 1 Tbsp olive oil and chicken breast in crock pot and cook on high for 3-4 hours. When chicken is cooked through, place chicken in medium bowl and shred chicken with 2 forks.
Fill Dutch oven/large pot on the stove with 5 cups of chicken stock. Heat over medium-high heat. In a small bowl, combine the cornstarch and water; whisk together until a smooth slurry forms. Stir the mixture into the stock and bring to a gentle boil. Add the onion, carrots, and celery and cook 10-15 minutes. Add the egg noodles and continue to cook until vegetables are tender and the noodles are cooked, about 5 minutes.
Add the chicken and parsley to the soup. Cook just until heated through, about 2 minutes. Season to taste with salt, pepper and cumin, and serve.

4 teaspoons salt
2 teaspoons paprika
1 teaspoon cayenne pepper
1 teaspoon onion powder
1 teaspoon thyme, chopped
1 teaspoon white pepper
1/2 teaspoon garlic powder

1 onion, chopped
In a small bowl, combine the above minus the onion.
Rub spice rub onto the chicken. Put chopped onion in bottom of the crock pot. Add chicken to the crock pot and add no liquid at all!

Chipotle-Glazed Chicken Breast and Grilled Chopped Veggie Salad
I’ve actually made this recipe once before, but it was pre-Krista Kooks time. I was actually in college when I made this. In fact, the first time I made this recipe, it was not NEARLY as good or as pretty :) As I prepared this recipe the 2nd time around, I kept asking myself, “What were you doing when you made this before?” Haha! I kept remembering how silly I was before in how I prepared it.
Nonetheless, we loved the slight spice this chicken has against the very fresh tasting salad. Best of all, this is a great good-for-you recipe! Here’s another Rachael Ray Get Real meal!
5 tablespoons vegetable oil, plus some for drizzling
1/2 small yellow onion, chopped
3 garlic cloves, chopped
2 tablespoons tomato paste
2 tablespoons honey
2 chipotle peppers in adobo sauce, finely chopped
1/4 cup plus 3 tablespoons cider vinegar
1 cup chicken stock or broth
1 medium zucchini sliced lengthwise into 1/2 inch slices
1 medium yellow squash, sliced lengthwise into 1/2 inch slices
1 red bell pepper, cut in half, cored, and seeded
1 Granny Smith apple, cored and sliced into 1/2 inch rings
4 boneless, skinless chicken breasts (6 ounces each)
Salt and freshly ground black pepper
1 16-ounce sack of coleslaw mix (on the produce aisle)
2 rounded tablespoons honey mustard, such as Guilden's Spicy Honey Mustard
1 1/2 teaspoons ground cumin (half a palmful)
2 rounded tablespoons sour cream or plain yogurt
Preheat a grill pan or charcoal grill to high.
To make the chipotle glaze, in a small saucepot heat about 2 tablespoons of the vegetable oil over medium-high heat. Add the onion and garlic; cook for about 2 minutes, stirring frequently. Add the tomato paste, honey, chipotles, and 1/4 cup cider vinegar, and cook for 1 minute. Add the chicken stock and cook for 10 minutes, or until glaze has thickened. Reserve the sauce on low heat.
While the chipotle glaze is cooking, season the sliced veggies, apple, and chicken breasts with salt and pepper. Drizzle with a generous amount of vegetable oil. Place the veggies, apple, and chicken on the grill. The veggies should be cooked in 3 to 4 minutes per side, or until they are well marked by the grill, then remove to cook slightly. The chicken should be cooked for 6 minutes per side. For the last 2 minutes of cooking time, baste the chicken using a pastry brush with the thickened chipotle glaze. Both sides of the chicken should be well coated with the glaze. Remove the chicken from the grill to rest while you put the rest of the grilled chopped veggie salad together.
Chop the cooled veggies into bite-size pieces and transfer to a salad bowl. Add the coleslaw mix. In a small bowl whisk together the honey mustard, cumin, and the remaining 3 tablespoons of cider vinegar; stream in the remaining 3 tablespoons of vegetable oil while you continue to whisk the dressing. Stir in the sour cream or yogurt. Season the dressing with salt and pepper. Pour the dressing over the veggies and toss to coat.
Slice the chicken breasts on an angle and serve them on top of a mound of the salad.

Salsa Verde Sour Cream Enchiladas in the CrockPot
Also, as each of these ladies posts will show, they did their enchiladas a la stovetop and oven. I chose to go the crockpot route partially to show you all that there are many recipes out there that can be made easier for you.
That said, I have some adjustments on how I did this recipe as to how you should do this recipe in order to help you with time AND flavor! First off, Homesick Texan’s recipe will instruct you on cooking the chicken via stovetop. Anytime I know a recipe is going to need shredded cooked chicken to continue, I use the CrockPot/Slow-Cooker. Thus, my frozen chicken went into the crockpot over about 1 Tbsp of olive oil. I then sprinkled all of the chicken liberally with my Mexican spice blend. Set your chicken to cook, off to work you go :) Make sure to set it on low low low if you are going to be gone for 6 or more hours. If you will be home during the chicken process and put the chicken in the crockpot in the afternoon, go ahead and set it it high for the 4 hour or 6 hour setting. The chicken should cook within about 2 hours.
I also decided to cook these enchiladas in the crockpot once assembled.
Here are the ingredients/instructions as used from The Novice Chef and adapted to the Krista Kooks’ Kitchen.
Ingredients:
2 boneless chicken breasts, cooked and shredded (See above comments on cooking this chicken. In one bowl, shred the chicken with 2 forks)
2 cloves of garlic, minced
1 Serrano pepper, diced (seeds-in if you like the heat)
1 Jalapeno, seeded, minced
1 Tbsp butter
1 Tbsp all-purpose flour (Use gluten-free all purpose flour to make this recipe gluten free)
1 cup chicken broth
1 cup Low-Fat or Fat-Free sour cream (make sure to use a gluten free sour cream to keep this recipe gluten free, such as Daisy)
8 oz jar of Salsa Verde (Krista Kooks used San Antonio Farms Medium Roasted Salsa Verde; highly recommend!)
3/4 tsp cumin
1/8 tsp cayenne
1/4 tsp salt
1/8 tsp white pepper
1/4 tsp garlic powder
1/8 cup cilantro, chopped
8 white corn tortillas, small fajita size
1 cup shredded sharp cheddar
1 cup shredded Monterrey Jack
1/4 medium onion, diced
Preheat the oven to 350. Melt butter over medium-high heat. Saute Serrano and Jalapeno until soft and then add the garlic, cooking for 1 minute.
Spray/grease a 9×13 baking dish. Add 1/2 cup of sauce to the bottom of the pan. Add chicken, cheese, and chopped onion to the center of each tortilla and roll, placing seam-side down in the dish. Pour the sauce over the enchiladas, top with leftover cheese, and bake at 350 for 25 minutes or until top is brown and bubbling.
Yields: 6-7 enchiladas
This recipe ranks up there with the Cajun Chicken Pasta. Both of these recipes should be on a restaurant menu!

As promised above, here is a remake of this dish! After finding out that I have Celiac Disease and need to live gluten-free, I challenged myself to go back and make some of my favorite recipes on Krista Kooks that were gluten-ful yet make them gluten-free. This was an easy choice! Also, as you can read above, I wasn't all that impressed with making these in the crockpot last time. Thus, these enchiladas went in the oven this time.
Luckily, this is an easy recipe to make gluten free by using gluten free all purpose flour and ensuring that the chicken broth, tortillas and sour cream are gluten free. This is all generally very easily done; it's just wise to double check.

CrockPot Chicken Mole
Let me start by saying that the sous chef LOVED this recipe. He had 2 servings. His recommendation was to make it again. I on the other hand hated this recipe. So why post it? Just because I dislike it doesn’t mean everyone else will hate it also. After all, the sous chef liked it! For that reason, I decided to share it.
There is some slight prep in getting this recipe into the slow-cooker, but, as with other recipes from this cookbook,
Ingredients:
1 medium sized yellow or white onion, sliced
4 boneless, skinless chicken thighs (Krista Kooks just bought organic thighs, cut off the skin, but left the bones in )
1 teaspoon Mexican seasoning blend (Check here for more info on that)
Pinch of salt
1 to 2 tablespoons olive oil
1 large ear of corn on the cob (optional), shucked and cut into 4 pieces
1/2 cup chicken broth, canned or homemade
2 tablespoons prepared mole sauce (such as Rogelio Bueno Autentico Mole or Dona Maria brands)
2 tablespoons creamy peanut butter
2 tablespoons dark brown sugar
1 tablespoon chocolate syrup (such as Hershey’s)
1/8 teaspoon red pepper flakes
2 teaspoons sesame seeds, toasted in a dry skillet over medium heat until golden, for garnish
Directions:
1. Spray the inside of the crock with nonstick cooking spray and lay the onion in the bottom (it will be the bed for the chicken). Sprinkle the chicken with the Mexican seasoning and the salt.
2. In a medium-size skillet over medium-high heat, warm the oil and add the chicken pieces in a single layer, with the smooth side down. Cook for 2 to 3 minutes, to form a nice browned surface; turn the chicken and brown the second side. Transfer the chicken to the slow cooker, smooth side up. Add the corn sections around the chicken, if using.
3. In a small bowl, combine the chicken broth, mole sauce, peanut butter, brown sugar, chocolate syrup, and red pepper flakes; stir with a fork. Place in the microwave to warm the sauce and melt the peanut butter a little, but don’t worry; the sauce will melt together during the slow cooking. Pour the mole sauce over the chicken in the crock. Cover and cook on HIGH for 3 hours (or on LOW for 6 hours).

Brazilian Chicken Cutlets with Raw Tropical Sauce
OMG, delicious! No side needed at all! This one is a dish all by its self, and a tasty one at that. There’s also not much major cooking involved in this dish either; most of the time is spent on dicing the tropical sauce. If you are someone that utilizes help from the grocery store in buying already diced onions, etc., this could be a pretty quick meal for you!
Also, as I mentioned on Wednesday, using Panko bread crumbs is a great way to change the texture of a recipe requiring bread crumbs. For this dish, I think it made it feel so much lighter/healthier. Additionally, I mentioned that I began using organic chicken; I did the same here and once again felt the same after this meal.
The sous chef was very impressed with this Rachel Ray recipe! We ate all the leftovers :)

Ingredients:
1 large, ripe mango, pitted and chopped
4 plum tomatoes, seeded and chopped
1/2 medium red onion, chopped
1/4 cup (about a palmful) cilantro, chopped
Juice of 1 Lime
A few dashes hot sauce
Salt and freshly ground black pepper
4 boneless, skinless chicken breast halves
1 cup all-purpose flour
2 eggs
1/2 cup breadcrumbs
1/2 cup grated Parmigiano-Reggiano cheese
1 teaspoon granulated garlic
1 lemon, zested and cut into wedges
4 tablespoons extra-virgin olive oil (EVOO), plus more as needed
Preheat oven to 250ºF.
Directions:
Prepare the raw sauce by combining the mango, plum tomatoes, red onion, cilantro, lime juice, hot sauce, salt and freshly ground black pepper in a medium mixing bowl. Stir gently to combine.
Flatten the chicken breasts into cutlets by butterflying each piece open then pounding it out 1/4 inch thick.
Set up three shallow dishes on the counter. To one dish add the flour, to the second add the eggs and beat with a splash of water, and to the third add the bred crumbs, grated Parmigiano-Reggiano, granulated garlic, and lemon zest.
Bread the cutlets by first tossing them in the flour, then dipping them in the beaten egg, then coating them in the breadcrumb mixture
Heat 2 tablespoons of EVOO in a large skillet over medium-high heat. Once the oil is hot, cook the cutlets in batches until golden brown on each side and cooked through, 4-5 minutes per side, adding more oil to the pan as needed between batches. As each cutlet finishes cooking, transfer it to a baking sheet and keep warm in the oven while the others cook.
Serve the cutlets with the raw sauce over top and lemon wedges to squeeze over the cutlets if desired.

Chicken Parm Bites
With just 2 people in the house, there tends not to be a lot of snacks around as I don’t typically buy anything at the grocery store that I’m not using in recipes. Anything else that I could buy would likely be bad before even half of whatever it is has the chance to be eaten. Thus, I decided to make a homemade snack. Silly me thought it might last throughout the week; not with my sous chef around. Once he learned of this delicious snack, I never got another bite. Literally.
All that said, these little bites are DELICIOUS and the tomato pesto sauce that goes with with is very refreshing! I had some leftovers bread crumbs that I used, however, if I could have, I would have used Panko bread crumbs. If you can, you definitely should use them!

Ingredients
1 cup all-purpose flour
2 eggs, lightly beaten

2 pounds chicken tenders, each cut into thirds
Salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil (EVOO)
1 15-ounce can crushed tomatoes
1/4 cup homemade basil pesto or store-bought
Directions
Arrange three shallow bowls on the counter and fill one with the flour, one with the eggs and one with a mixture of the bread crumbs, cheese, garlic, lemon zest and parsley.
Season the chicken pieces with salt and freshly ground black pepper, and coat each piece first in the flour, then the egg and finally in the breadcrumb-cheese mixture. Set the coated chicken pieces on a baking sheet.
Place a large pan over medium-high heat with 3 tablespoons EVOO. Cook the chicken pieces in 2 batches, turning once, until golden brown and cooked through, 5-6 minutes.
While the pieces are cooking, place a small pot over medium-high heat with the crushed tomatoes and bring up to a bubble. Remove the pot from the heat and stir in the pesto.
Serve the chicken bites with the tomato-pesto sauce alongside.
I also used Organic chicken for the first time when I made this recipe, and I really like it!

Chicken Ropa Vieja
Once the chicken was ready, I shredded it with two forks. I also prepared some canned black beans with some latin spice as well as the Chipotle Rice to serve the chicken on. Similar to Gina, I wanted some Chipotle type dinner right at home :) I, too, love me some Chipotle!
Ingredients
Servings: 4
3 chicken breast halves
1 small onion, quartered
1 tomato, quartered
1 carrot, peeled and chopped
2 cloves garlic, peeled
1 tbsp olive oil
1 small onion, thinly sliced
1 small green bell pepper, seeded and thinly sliced
1 small red bell pepper, seeded and thinly sliced
1/4 cup dry white wine
1/2 cup tomato sauce
reserved broth
1 tsp cumin, or more to taste (I like a lot)
garlic powder
salt and pepper to taste
Directions:
Place chicken, onion, tomato, carrot, and 2 cloves of garlic into crock pot. Add water to cover, and set to high for 4 hours until the chicken is tender.
In a large deep skillet, heat olive oil over medium heat. Add the garlic, onions, green peppers, and red peppers. Cook about 3 to 4 minutes. Stir in chicken, tomato sauce, white wine, and about 3/4 cup of the reserved broth to create a nice sauce. Season with cumin, garlic powder salt, and pepper. Cover and simmer on low for about 10 minutes more adding more broth and seasoning if needed. Makes 4 cups.
So easy for those of you who are gone most of the day working :) Your family/spouse will love you!

Cajun Chicken Alfredo and 100th Post!
I can't believe it's true, but this is really my 100th post! I'm extremely excited to share this delicious recipe that the sous chef and I shared with friends who both raved about this pasta. I think all of us went back fro seconds...I think. Oh wait...did I say four of us shared this recipe?! I meant 4 and one on the way!
Nope, it's not me. Our guests are expecting :) Anyway, this recipe continues in my Guy Fieri recipe week.
Ingredients
4 (5-ounce) boneless, skinless chicken breasts
1 cup blackening spice (recommended: Paul Prudhomme's Chicken)
(Krista Kooks made her own blackening spice)
2 tablespoons extra-virgin olive oil
3 tablespoons minced garlic
1 cup roughly chopped marinated sun-dried tomatoes
1/4 cup white wine
3 cups heavy cream
3/4 cup grated Parmesan
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
1 pound cooked fettuccine
1/2 cup sliced scallions
Directions
Preheat the oven to 350 degrees F.
Dredge the chicken breasts in the blackening spice and place in a cast iron skillet over very high heat. Blacken both sides of the chicken and place in the oven for 10 minutes, or until internal temperature of chicken reaches 165 degrees F on an instant-read thermometer. Slice in strips on the bias and set aside.
In a saute pan over medium heat, add 2 tablespoons of extra-virgin olive oil. Add garlic and lightly caramelize. Then add the sun-dried tomatoes and the chicken slices. Deglaze the pan with the white wine. Add the heavy cream, increase the heat to a simmer, and reduce the cream sauce by half.
When the cream sauce is to desired consistency, stir in 1/2 cup Parmesan, salt, pepper, and pasta.
Nest the pasta on large rimmed plates, pour sauce over pasta, and garnish with scallions and the remaining 1/4 cup Parmesan.

Crock Pot Orange Chicken
Mmmmm, orange chicken at home. Chinese takeout at home! If you haven't visited Stephanie O'dea's slow-cooking blog, you might want to take a browse through. She made a goal to cook via a slow-cooker for one year. She did it and was so successful that she made a cookbook out of it!
This orange chicken is one of her recipes, but I actually found it via Sweet Tea in Texas.
1 1/2 pounds boneless chicken, cut in 2-inch chunks
1/2 cup flour
olive oil, for browning the chicken
1 tablespoon kosher salt (If you are using iodized salt, I'd suggest using 1 to 1 1/2 teaspoons)
6 ounces (1/2 can) frozen orange juice concentrate, thawed (little-to-no pulp. The pulp can taste a bit bitter when cooked)
3 tablespoons brown sugar
1 teaspoon balsamic vinegar
3 tablespoons ketchup
Directions
Use a 4 quart slow cooker for best results. Dredge the chicken pieces with the flour, and shake off the excess. Go ahead and throw away any remaining flour, we won’t need it. Heat olive oil in a large skillet on the stove and brown the chicken on all sides. There is no need to fully cook it, just sear it enough for the flour to stick and get a nice coating.
Plop the chicken pieces into your slow cooker. In a small mixing bowl, combine the orange juice concentrate, brown sugar, balsamic vinegar, salt, and ketchup. Taste. If you’d like the chicken to be a bit sweeter, add a touch more sugar. Pour sauce mixture evenly over the chicken, and toss gingerly to coat.
Cover and cook on low for 6 hours, or on high for 3 to 4. Serve over white or brown rice.
Here are the suggestions that I would have:
If you like ORANGE chicken to taste like orange, then don't do a thing. This is the perfect recipe for you. I've read comments on several different blogs, and those who love orange flavor for their orange chicken love the taste of this recipe.
If you are expecting your orange chicken to taste more like Panda Express or perhaps your favorite Chinese restaurant, then there needs to be some changes made to this recipe. This recipe needs 6 ounces of orange concentrate, but perhaps 4 ounces of orange concentrate and 2 ounces of soy sauce might get you closer to the Panda Express type taste. I also think adding 1/4 teaspoon of ground ginger might be a nice addition as well.

Additionally, I used a larger Crock Pot, and this really only took about an hour and half to cook. This isn't a recipe I'd prepare before work; just wait and do it as soon as you get home.

Caribbean Chicken
Mouth. Watering.
This chicken is soooooo delicious! I paired this chicken with a unbelievably delicious salad, which will come next, but this chicken needs it's own post and attention.
Note: This chicken does need to marinate for 4 to 8 hours, but it's very worth the preparation, which is by no means difficult. The recipe instructs you to pour all of the ingredients into a food processor, but, if you know me, you'll know what I used instead.

My Magic Bullet! Man, so so easy!
Ingredients
1 teaspoon allspice
1/4 cup red onion, chopped
1/2 cup green onions, chopped
2 tablespoons extra-virgin olive oil
1/4 cup orange juice, fresh
1 tablespoon lime zest
2 tablespoons soy sauce
2 tablespoons freshly chopped thyme leaves
2 tablespoons jalapeno, seeded, diced
2 teaspoons freshly grated or chopped ginger
1 clove garlic
Salt and pepper
4 chicken breasts, bone and skin on
Lime wedges
Directions
Puree all ingredients except chicken in food processor. Add marinade and chicken to re-sealable plastic bag, mix thoroughly and let marinate, refrigerated, for 4 to 8 hours.
Preheat oven to 350 degrees F.
Heat grill to high, remove excess marinade from chicken and place on grill. Grill each side of chicken for 3 to 4 minutes then place on a pan and finish in the oven for 15 minutes.
Squeeze a lime wedge over each piece of chicken and serve.

Devilish Sesame Chicken with Green Beans and Scallion Rice
This recipe comes from Rachael Ray's Big Orange book, but it is apparently also found in her Everyday Magazine.
The portions of this recipe that I will list are those that come from her Big Orange Book, which is part of the 'Meals for One' chapter. Thus, the recipe listed below is meant for one, but the clickable recipe above is the portions for 4 servings. Ingredients:
1 tablespoon canola or vegetable oil
1/4 cup white rice
3/4 cup chicken stock
2 scallions, finely chopped
Salt
1 boneless skinless chicken breast, thinly sliced
1/2 red bell pepper, seeded and thinly sliced
1 teaspoon hot sauce
1 rounded teaspoon Dijon mustard
1 tablespoon tamari (aged soy sauce)
1 tablespoon honey
1 teaspoon sesame oil
2 teaspoons sesame seeds, toasted
Directions:
In a small skillet, heat 1/2 tablespoon of the oil over medium-high heat. Add the rice and toast for a minute or two, then add 1/2 cup of the chicken stock. Stir and reduce the heat to low, cover the pan with a small plate or aluminum foil, and cook until the rice is tender, about 17 minutes. Add the scallions to the rice in the last minute of cooking time.
Bring 1 inch of water to to a boil in a second small pan and salt it. Add the beans and cook for 2 minutes, then drain them and run them under cold water to set the green color. Set aside.
When the rice has cooked for about 8 minutes, heat the remaining 1/2 tablespoon of oil in a skillet over high heat until it ripples. Add the chicken and cook until it is lightly golden, 3 to 4 minutes. Add the bell pepper and cook for 2 to 3 minutes.
In a small bowl, mix together the hot sauce, mustard, tamari, honey, and the remaining 1/4 cup chicken stock.
Add the green beans to the chicken and peppers and toss for 1 minute. Pour the sauce over the chicken and vegetables and toss for a minutes or two to heat through. Remove from the heat and drizzle the sesame oil over the chicken.
Fluff the rice with a fork and transfer to a shallow bowl. Top with the chicken and garnish with the sesame seeds.
